This long and special process gives each meat its own style and character. We suggest that you taste the meat before adding sauce. *The USDA Prime Beef Brisket and Pork Shoulder have boldly flavored rubs and long smoke times to develop a pronounced smoke ring and rich “Bark” exterior. *The Beef Tri-Tip is smoked to only a rare doneness then finished on the grill as a steak and served sliced, medium rare to medium. *The Pork Back Ribs and Whole Chicken rubs are milder and the smoke flavor is lighter.
